How To Make Thai Chicken and Fried Rice (the easy way!!)

What is a cooking recipe and instructions doing on Otto's blog you ask?? If you know me you know that I don't know how to cook so this must be a shock! The reason that I have added this here is to dispel any concerns about my nutrition and also because I not only shot the video you are about to see (if you choose) but also I wrote all the music! Food for the body and the mind!!
  
Easy Thai Chicken and Fried Rice
So in those respects this is appropriate for a blog about what I am doing! (makes sense to me) The picture above shows what this yummy dish looks like right before you stuff it all in your mouth and let out a happy and satisfying shout of delicious joy! YUM!

The video is a compressed time line of all the cooking involved. It takes about 3 minutes to watch but the entire cooking time is under 10 minutes if you have all the ingredients ready.

Thai Chicken and Fried Rice
   
Ingredients:
Boneless Chicken Thigh
Chopped Diced Onion
Chopped Red Bell Pepper
Sweet Basil Leaves (picked, cleaned and diced)
Chopped Garlic
Sliced fresh cucumber
Vietnamese Fish Sauce (nuoc mam)
Oyster Sauce
2 Large eggs
Sugar
White Rice
Virgin Olive Oil
Chili Hot Sauce
  
Preparation:
Thoroughly clean Boneless Chicken Thigh in cold water and lightly salt to taste
Cut in slices
 
Cook rice in rice steamer and chill so it isn't sticky
 
Cooking:
 
Heat large high sided frying pan on burner and add Virgin Olive Oil
Once hot add in Garlic and Onion, brown them up and add the chicken slices
  
Allow chicken to begin cooking and reach pan temperature (1-2 minutes) stirring lightly
Add Chili Hot Sauce to taste (a dash or two)
   
Keep ingredients moving in pan throughout cooking process to prevent burning with medium heat
    
Add Sugar, Oyster Sauce and Vietnamese Fish Sauce to pan stirring all ingredients together,
Stir constantly and allow to cook for another 1-2 minutes before adding Steamed Rice and Red Bell Peppers
   
Mix in Steamed rice thoroughly until rice color is even brown from sauce, season to taste
with oyster sauce, basil, salt and pepper as required
     
Open hole in middle of pan by spreading out ingredients exposing frying pan,
Crack both eggs and place in center, immediately begin mixing (scrambling) eggs with other ingredients
    
Allow all ingredients to thoroughly cook, serve hot and garnish with chilled sliced cucumbers and basil leaves!
